I am Italian and Irish (thus Italish), both cultures are know for their drinking prowess and my family is no exception. So, in theory I should have been drinking a
glass bottle of wine while cooking. However as I was responsible for the welfare of my child, I skipped this essential step. I think it still turned out ok...
Begin with EVOO (extra virgin olive oil) a lg pot. Heat to medium and add diced onions and crushed garlic, and dried chili peppers. Cook though and add deer meat (or whatever wild game you are tying to mask the taste of). After leaving the wilds of Maine where I grew up I promised myself that I would never again eat deer, moose, bear, etc. I was actually a vegetarian for 5 years before taking my first bite of a delicious 100% beef burger, anyways I ended up marring a hunter and thus is life. I have a freezer full of meet that I have to use, but that I have the taste of. This is where the chili spices come in. I used to make my own, but now I usually just buy a packet at the store, as it is actually better than anything I would come up with. Add this to the cooking meat. Cook until brown and add 2 cans of whole tomatoes. Add two cans of water. Add beans (I soften my own from dried but feel free to use canned) and simmer until tomatoes are liquefied (a few hours). You can take a nap during this time, go ahead I give you permission, you have worked hard and earned it:) Make sure though that the pot is just simmering so that you don't burn the bottom and end up with a burnt flavor that you have to convince your family was intentional:)
Serve with lots of cheese and avacado on top. YUM!
